Marketer Steve's 3 Tomato and Feta Cheese Salad
THIS BRIGHT AND REFRESHING SUMMER SALAD IS PERFECT WITH GARDEN FRESH TOMATOES FROM SWEET CORN CHARLIE. IT IS VERY VERSATILE AND EASY TO MAKE.
3 TOMATOES OF EQUAL SIZE:
1 RED "SAMMY'S TOMATOES" DICED
1 YELLOW "SAMMY'S TOMATOES" DICED
1 GREEN ZEBRA "SAMMY'S TOMATOES" DICED
1 LG. BEIT ALPHA CUCUMBER DICED
1/2 VIDALIA ONION DICED
1/4 KOHLRABI
15 KALAMATA OLIVES MINCED
1/8 CUP PARSELY CHOPPED
*SET ASIDE 1/4 OF EACH OF THE DICED TOMATOES FOR GARNISH
DICE TOMATOES, ONION, KOHLARABI, AND CUCUMBER.
PUT IN A GLASS BOWL
ADD CHOPPED PARSLEY AND MINCED OLIVES
POUR VINEGAR OVER THE TOP AND MIX.
LET IT GET HAPPY IN THE FRIDGE OVERNIGHT.
GARNISH DISH WITH REST OF NON-MARINATED TOMATOES
SALT AND PEPPER TO TASTE

Grilled Eggplant
First trim the ends of the eggplant and cut lengthwise. Brush eggplant with olive oil on both sides and season with salt. Set aside. For the eggplant: Set grill at medium high.
Brush olive oil on foil paper and sprinkle with a dash of salt. Make sure you cut a long piece of foil to wrap the eggplant. Place eggplant on top of foil.
Slice: 4-5 pieces of Sammy's Tomatoes, 8 pieces of fresh Sweet Corn Charlie's basil leaves, and several pieces of Swiss cheese. Place on top of eggplant: Swiss cheese slices, tomatoes slices, and some basil. Sprinkle some Parmesan cheese on top. Cover eggplant with foil. Grill for 8-10 minutes.
After it is done...let it cool...and enjoy!
Served with fresh sweet corn, hamburger, a piece of watermelon, and a tall glass of iced tea.
Vegetable Lasagna
Ingredients:
1 pound lasagna noodle cooked and cooled and laid flat
1 large eggplant, sliced lengthwise, 1/4 inch slices (do not peel)
6 zucchini, sliced lengthwise, 1/4 inch slices (do not peel)
2 red/green bell peppers (sliced)
1 head garlic
2 small squashes (sliced)
2 large yellow onions (sliced into 1/4 inch rounds)
1 cup olive oil
2 tsp. salt
1 tsp. black pepper
2 Sammy's Tomatoes (diced)
2 tbsp. Sweet Corn Charlie fresh basil chopped fine
1 can (8 oz.) tomato sauce
1/2 pound Mozzarella cheese grated
1 small container ricotta cheese
1 egg
1/2 cup grated Parmesan cheese
1 small container cottage cheese
Preparation:
Cook lasagna (follow instructions on box). I always put two tsp. salt in and a tbsp. of olive oil when boiling and then add pasta.
Cut the tomatoes in small pieces and set aside.
Cut zucchini, eggplant, squash, onion, bell pepper in circles and set aside.
Prepare cheese mixture. In a mixture...add 1 egg, salt, and black pepper. Set aside.
In another bowl add 2 tbsp. olive oil, sea salt, and black pepper. Add all the vegetables; 2 bay leaves, 6 pieces of basil, 1 tsp. rosemary, 1 tsp. fennel and 1 tsp. oregano. Add tomato sauce. Let it simmer for 30 minutes. After it has cooked remove bay leaves.
Assemble the lasagna by layering as follows: Coat baking dish with olive oil.

Lightly sprinkle salt and pepper to each layer
Top the final layer of noodles with the remaining parmesan and mozzarella cheese. Cover baking dish with foil. Bake at 350 degrees for 35 minutes.
Mediterranean Grilled Cheese
Ingredients:
1 loaf of 9 or 12 grain bread
4 tbsp. butter
1/2 pound mozzarella
1 Sammy's Tomato (sliced 1/4 inch thick)
2 tsp. finely chopped basil leaves
Lemon pepper
Brush 2 slices of bread with butter on both sides.
Cut enough 1/4 inch thick slices of mozzarella cheese to cover 2 slices of bread.
Saute the tomatoes and basil.
Assemble the two sandwiches.
In a 12" nonstick skillet heat 2 tablespoons of butter until hot but not smoking and cook until golden brown about 2 minutes on each side.
